CREAMY PESTO PASTA

It seems that recipes are very popular on this blog, so here’s another one. It’s a very simple feed-a-crowd dish, perfect for weeknights when you don’t have time on your hands. It is dairy free and meatless, but full of amazing nutrients and flavours. Approved by Bernarda, my photographer, a big meat lover. 🙂

INGREDIENTS (4 people):

  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 250 g cherry tomatoes
  • 1/2 zucchini
  • 1 pack of spaghetti of your choice

Pesto:

  • 1/4 cup of olive oil
  • 1/4 cup of pine nuts
  • 1 handfull of basil
  • 2-3 pressed garlic cloves
  • sea salt and pepper to taste

INSTRUCTIONS: 

  1. Boil pot of water and add box of pasta, cook as directed on the box.
  2. Wash and chop all veggies.
  3. Turn pan on medium heat, add a little bit of olive oil, add veggies.
  4. Cook veggies until moisture is all removed.
  5. While veggies are cooking, add the pine nuts, basil, olive oil, garlic, salt and pepper to a food processor. Blend until creamy.
  6. Add cooked spaghetti to the veggies, then add pesto until everything is covered as desired.

Tip: Make loads of pesto and keep it in the fridge. Mix it with cooked pasta and you have a delicious, healthy 10-minute dinner.

Čini se da su recepti vrlo popularni i traženi na ovom blogu, stoga vam danas darujem još jedan. I ovoga puta jelo je vrlo jednostavno, izvrsno za brze večere tijekom tjedna, kad nitko nema vremena cijelu večer provoditi u kuhinji, ili kad vam se najave gosti. Bez mliječnih proizvoda i mesa, ali puno hranjivih tvari i izvrsnih okusa. Odobrila ga je i Bernarda, moja fotografkinja, inače velika ljubiteljica mesa. 🙂

SASTOJCI (za 4 osobe):

  • 1 crvena paprika
  • 1 zelena paprika
  • 1 žuta paprika
  • 250 grama cherry rajčica
  • pola tikvice
  • pakiranje špageta po izboru

Pesto:

  • 1/4 šalice pinjola
  • 1/4 šalice maslinova ulja
  • šaka svježeg bosiljka
  • 2-3 češnja češnjaka
  • morska sol i papar po ukusu

UPUTE:

  1. Skuhajte špagete prema uputama na kutiji.
  2. Operite i nasjeckajte svo povrće.
  3. Stavite tavu na štednjak, ulijte malo maslinova ulja te zagrijte na srednje jakoj temperaturi.
  4. Pirjajte povrće dok ne ispari sva tekućina iz tave.
  5. Dok se povrće pirja, u blender stavite bosiljak, pinjole, maslinovo ulje, češnjak, sol i papar te miksajte dok ne dobijete svilenkasti pesto.
  6. Kuhane špagete dodajte povrću i sve to prelijte pestom, te miješajte dok se svi sastojci ne sljube. Po potrebi dodajte malo vode u kojoj se kuhala tjestenina kako bi umak bio jos sočniji.

Savjet: Pesto možete napraviti u većoj količini te ga držati u hladnjaku. Za posebno užurbanih dana, samo ga dodajte skuhanoj tjestenini i za doslovno 10 minuta imat ćete večeru na stolu. Definitivno bolje od sendviča. 🙂
